What it tastes like
SPG is the backbone of Texas barbecue: salt, black pepper and garlic. Ours leads with sea salt and a coarse black pepper bite, then garlic, with a little turbinado sugar to round off the edges. It's two kinds of salt, pepper and garlic in large flakes, and it's salt-forward on purpose, so it seasons the meat and lets the smoke do the rest.
SuckleBusters didn't invent SPG, but we were the first to perfect and market it.
What it's best on
Brisket, steaks, burgers, chicken, pork belly, lamb, fish and vegetables. If you only buy one rub, this is the one that goes on everything.
How to use it
- Brisket: a thin layer of Worcestershire sauce as the binder, SPG as the salty, garlicky base, then 1836 Beef Rub and a light layer of Sugar Daddy. Season the edges too. See Dan's Texas-style brisket recipe.
- Chicken drumsticks: 1 to 2 tablespoons for 8 drumsticks. Shake them in a zip-top bag, then rest 30 minutes or overnight. Recipe: Texas bourbon molasses drumsticks.
- Pork belly burnt ends: a light dusting of SPG first, then a thick layer of Hog Waller. Recipe: pork belly burnt ends.
- Go light the first time. SPG is salty. Start with a light, even coat and add more next cook if you want it. If you brine or inject, cut it back.

What does SPG stand for?
Salt, pepper and garlic. It's the classic Texas brisket and steak seasoning.
How much should I use?
Start light. A light, even coat on all sides is enough for most cuts, and 1 to 2 tablespoons covers 8 chicken drumsticks. SPG is salt-forward, so build up from there.
What's the difference between SPG and SPG Hot?
SPG Hot is the same salt, pepper and garlic base with jalapeño and habanero added. It's rated Extra Hot.
Can I use it with other rubs?
Yes. Dan puts SPG down first on brisket and pork belly, then layers 1836 Beef Rub or Hog Waller on top.
Which size should I buy?
The 14.5 oz large jar is the everyday size. The 2 lb bag refills it. Cook teams and caterers buy the 6 lb gallon jug.
